Origin - BrazilFazenda Palmital, located in Cabo Verde in the mountains of southern Minas Gerais, is a historic family-run farm with roots going back over a century. Owned and managed by the Rodrigues de Melo family, the farm combines long-standing tradition with modern, sustainable practices, including preserving around 35% of its land as native forest and using solar energy to power operations. Coffee at Palmital is grown with a strong focus on quality and consistency, supported by a dedicated team, many of whom have generational ties to the farm, resulting in coffees that are both carefully produced and deeply connected to the land and people behind them.
One of the most interesting things about Brazilian coffee is how it’s processed. Unlike many countries that rely heavily on fully washed methods, Brazil is famous for its natural and pulped natural (semi-washed) processing. Because of the country’s warm climate and consistent sunshine, coffee cherries can be dried more easily on patios or raised beds. This allows producers to leave more of the fruit on the bean during drying, which enhances sweetness and body, giving Brazilian coffees their signature chocolatey, nutty, and caramel like profiles.
Process - Pulped Natural
Pulped natural coffee, also known as honey-processed coffee, is a method of processing coffee cherries that sits between the washed and natural methods. After harvesting, the outer skin of the cherry is removed, but some or all of the sticky, sugar-rich mucilage is left on the beans as they dry. This allows the coffee to absorb more sweetness and body from the fruit compared to fully washed coffees, while still maintaining more clarity and cleanliness than fully natural ones. The result is typically a well-balanced cup with notes of caramel, honey, and ripe fruit, along with a smooth texture and mild acidity
