ASOPROAAA has been influential in the revival of agricultural production in the area following Hurricane Mitch back in 1998, and a pioneer in the processing of micro lots by its members. Lots from ASOPROAAA have won numerous quality awards in addition to regularly placing in the finals of the Cup of Excellence competition.
Black Honey Process
The Black Honey process is a complex coffee processing method where most of the coffee cherry's outer layers (skin and pulp) are removed, but a large amount of the sweet, sticky mucilage is intentionally left on the bean to dry. This lengthy, controlled drying process, often done in the shade, allows the sugars from the remaining mucilage to ferment and deeply infuse the coffee bean, creating a rich, syrupy body and intense sweetness.
