Villa Corzo, in southern Chiapas, is surrounded by fertile valleys and the Sierra Madre mountains. Its volcanic soils, favourable climate and rich biodiversity have made it an ideal coffee-growing region for generations. For Doña Duglas, exceptional coffee comes from paying close attention to every detail. From nurturing the coffee trees throughout the growing season to hand-selecting only the ripest cherries at harvest, she takes a careful and considered approach at every stage.
Process - Washed
The smallholder farmers of Villa Corzo use traditional, artisan methods to produce their coffee, hand-picking ripe cherries before fermenting, washing and sun-drying them. The region’s volcanic soils, abundant rainfall and high elevations of 1,200–1,500 metres provide ideal conditions for slow cherry maturation, helping develop balanced sweetness and complexity.
